Dairy Free Egg Free Soft Sourdough Dinner Rolls

Dinner rolls are such a nice side to go along with really any meal. They are great with stews, soups, meat dishes and even pasta. The sourdough element to these rolls adds the extra benefit of fermenting and breaking down the flour, making them easier to digest. Another benefit of this particular recipe is that it’s both dairy and egg free. Even those these rolls are dairy and egg free, they are still wonderfully soft and fluffy. When you have dietary restrictions, you shouldn’t have to miss out on amazing sourdough recipes! Now, let’s get to baking!

Equipment

Ingredients

  • 2 tbsp (30 grams) olive oil
  • 1 cup (230 grams) water
  • 2 tablespoons (42 grams) honey 
  • 2 teaspoons (10 grams) salt
  • 1/2 cup (100 grams) active sourdough starter
  • 3 cups (360 grams) bread flour

Instructions

  1. To a large glass bowl, add olive oil, water, honey, salt, and sourdough starter.
  2. Using a dough whisk mix the ingredients together until a cloudy mixture is formed.
  3. Add the bread flour to the bowl. 
  4. Mix the flour with the dough whisk until a shaggy dough forms and there are no more dry bits visible.
  5. Let the dough rest for 30 minutes.
  6. Perform one set of stretch and folds. Stretch and fold the dough once and then turn the bowl a quarter of the way around clockwise and stretch and fold the dough again. There will be four total stretch and folds performed while working your way around the bowl.
  7. Let the dough rest for 30 minutes – 1 hour.
  8. Perform a second set of stretch and folds.
  9. Let the dough rise from 8-12 hours or until doubled in size.
  10. Place the dough in the fridge to cold ferment for up to 72 hours (optional)
  11. Shape the dough into 12 individual dinner rolls and place on a large parchment lined pan.
  12. Allow the dough to rise for around 4-8 hours or until doubled in size.
  13. Preheat the oven to 375 F.
  14. Brush the tops of the dinner rolls with a little water to promote browning during the baking process.
  15. Bake for 15-20 minutes, checking the rolls around 15 minutes for doneness. Oven temperatures vary and it’s important not to overbake. The rolls should reach an internal temperature of around 205-210 F.
  16. Allow the rolls to cool for around 30 mintues before eating. Enjoy!
