Avocado oil is also an oil that has a neutral flavor profile so it will not change the taste of your mayo or add a weird flavor to it. I make a new batch of homemade avocado oil mayo every couple weeks to store in the fridge and use as needed. Storage
This recipe can be stored in the fridge for up to 2 weeks. Some may store homemade mayo for longer, but it all depends on the freshness of your eggs and proper refrigerator temperature.

- Small bowl/Mason jar
- Immersion Blender
Ingredients
- 1 cup avocado oil
- 1 large egg
- 1/2 teaspoon yellow mustard
- Salt to taste
Instructions
- Add the egg to the bowl.
- Next, using the immersion blender, mix until the egg is slightly beaten.
- Then, slowly stream in avocado oil while running the immersion blender constantly.
- Next, once the mixture starts to thicken, pour in the rest of the avocado oil and fully incorporate.
- Finally, add in the yellow mustard and salt and mix.
- Enjoy your healthier mayo!
